Salat mit Rucola, Ziegenkäse und gegrilltem Hähnchen
Dieser Salat ist für mich ein Beweis, dass das Diätessen auch lecker sein kann. Das ist in letzter Zeit unser Lieblingsmittagessen. Nächster Vorteil: Man kann es schnell und einfach zubereiten. Es eignet sich ebenfalls als Hauptgericht wenn wir Gäste einladen. Unsere Gäste waren von dem Salat sehr begeistert. Davor haben wir eine Suppe serviert und die Gästen hatten sogar noch Platz für einen Nachtisch.
Zutaten für schnellen und leckeren Salat:
- Rucola
- Tomaten
- Paprika
- Frühlingszwiebel
- Ziegenkäse
- Hähnchenbrust
- Olivenöl
- Balsamico Essig
- Salatkräuter
- Gewürze für das Hähnchen
- eventuell Pinienkerne
1.Hähnchenbrust in Streifen schneiden und nach Belieben würzen. Ich benutze dazu Gewürze, die ich gerade zu Hause haben, am liebsten Garam Masala oder Sojasoße. Das Fleisch in einer Grillpfanne langsam anbraten.
2. Rucolablätter waschen, halbieren und auf einem Teller gleichmässig verteilen.
3. Tomaten und Paprika würfeln und auf die Rucolablätter verteilen.
4. Frühlingszwiebel und Ziegenkäse in Scheiben schneiden und ebenfalls auf die Rucolablätter verteilen.
5. Die Pinienkerne in einer Pfanne ohne Öl rösten.
5. Dressing: Olivenöl, Balsamicoessig und Salatkräuter mischen.
6. Die noch warmen Hähnchenbruststreifen und die Pinienkerne auf dem Salat verteilen und alles mit Dressing begießen.
